Instructions
- Turn on the Instant Pot and select the "Saute" function. Heat the olive oil in the pot.
- Add the diced onion, sliced carrots, and sliced celery to the pot. Cook for 3-4 minutes, or until the vegetables start to soften.
- Add the minced garlic and diced chicken to the pot. Cook for an additional 2-3 minutes, or until the chicken is no longer pink.
- Pour in the chicken broth and water, then add the bay leaves, dried thyme, dried rosemary, salt, and pepper. Stir to combine.
- Close the lid of the Instant Pot and set the valve to the "Sealing" position. Select the "Manual" or "Pressure Cook" setting and set the timer for 5 minutes.
- Once the cooking cycle is complete, allow the pressure to naturally release for 10 minutes, then carefully turn the valve to the "Venting" position to release any remaining pressure.
- Carefully remove the lid and discard the bay leaves. Stir in the uncooked egg noodles.
- Turn on the "Saute" function again and cook the soup for an additional 3-4 minutes, or until the noodles are cooked to your desired level of doneness.
