  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened and translucent, about 3-4 minutes.
  2. Add the sliced mushrooms to the pot and cook until they release their moisture and start to brown, about 5-6 minutes.
  3. Stir in the Arborio rice and cook for another 1-2 minutes, stirring constantly, until the rice is well coated with oil and slightly translucent.
  4. Gradually add the vegetable broth or chicken broth to the pot, one ladleful at a time, stirring constantly and allowing the liquid to be absorbed before adding more. Continue this process until the rice is creamy and tender, but still slightly al dente, about 20-25 minutes.
